Dried-smoked-beef stew is a Lao traditional country side dish :). Serve it with lots of vegetable and sticky rice! Zap!
1. In a pot, add water, salt, lemon grass, and galangal, roasted garlic, roasted shallots, and chili.
2. Once the water is boiling, add fermented fish sauce (padek), dried beef and egg plants. Cook about 15 minutes with medium heat.
3. Take out the meat, egg plants, shallots, garlic, chili. Pound them together in a mortar.
4. Pour the remaining soup from the pot to the mortar and mix together. Adjust the seasoning. Add all herbs and serve!
