Keng phet Pet Yarng (roasted duck breast with red curry) is a Thai dish which has become popular in the region. If you have roasted duck in your fridge, try this recipe, it's not complicated to make.
1. Stir fry the red curry paste with oil until it brings aroma, then add the coconut milk, the sliced yellow onions, the cherry tomatoes and the slices of roasted duck breasts.
2. Add seasoning with palm sugar and fish sauce.
3. When the sauce has reduced as you like, taste it and serve it on a plate. Top it with sweet basil. Eat with steamed Jasmine rice. Zap!
