I think many people already know how to cook Red Curry Chicken. But try this recipe, maybe you will love it more than your own :)
Step 1. Mix oil and curry paste in a pan, stir fry together until it brings aroma, then add the chicken, stir all until the chicken color becomes light brown.
Step 2. Add coconut milk, potatoes, egg plants and carrots. Add seasoning with Knorr powder, fish sauce, palm sugar and cook all on medium heat until the chicken and vegetables are cooked.
