When you have no idea what to cook during diet time. This Chicken soup with chayote is the answer. Asian soup style, so yummy!
1. Use a large pot, add water with salt, lemongrass, ginger, thin soy sauce and seasoning powder (or cube).
2. When the water is boiling, add the chicken and cook on medium heat. Remove the bubbles from the surface from time to time. Cook for about 30 to 40 minutes.
3. Add Chayote and keep cooking for about 10 minutes more. Add fish sauce and ground pepper. Taste and add green onions and coriander. Remove from the stove and serve with steam rice.
