This super easy mushroom soup with is cooked with fermented fish sauce (Padek), Lao style. You just need one pot to cook :)
1. Fill up a pot with water and add salt, lemongrass, red shallots and chili.
2. When the water is boiling, add the fermented fish sauce (Padek), sugar, mushrooms and the pumpkin. Cook on medium to high heat for about 10 minutes or until the mushrooms and the pumpkin are cooked.
3. Add the Lemon Basil (hairy basil) and turn off the heat. Taste and ready to serve.
