Cockles is popular in Laos. Mostly we imported fresh ones from Thailand and Vietnam. Today i am going to make stir fried cockles for lunch.
1. Boil some water, add the cockles cook them for about 1 minute, when the cockles are opening, take them out from the pot and remove them from their shells.
2. Heat some oil in a pan, add the garlic and fry it until yellow. Add the chili and Thai chili paste. Stir until golden.
3. Add the cockles, add the oyster sauce and stir fry together. Add 1 tbsp of water.
4. Add the kaffir lime leaves and mix together. Add Thai sweet basil. Stir a bit, turn off and serve.
