Duck blood pudding Lao style (Leuad Peng Ped) is raw blood then make it becomes a jelly. Also mixing with cooked meat and fresh herbs. If you like to try this strange food, see recipe below.

Ingredients

  • 1 small bag of duck blood, they sell at the fresh market, or if you want to do it by yourself, here is the instruction for 2-3kg live duck: Prepare a bowl with 3 tbsp fish sauce mix with 5 tbsp water, then mix well with the blood immediately.
  • 1 small bowl of duck organs, skin and meat, small sliced
  • 1 tablespoon of MSG
  • 3 tablespoons of fried shallots, for topping
  • 3 stalks of lemongrass, very thin sliced
  • 20 fresh chili, thin slices and leave some for serving
  • 4 tablespoons of roasted peanuts, for topping
  • 4 tablespoons of roasted rice powder, for topping (optional)
  • 3 branches of green onions, thin sliced for topping
  • 3 branches of coriander, thin sliced for topping
  • 3 tablespoons of mint leaves, for topping
  • 3 tablespoons of thai basil, for topping (optional)
  • 1 L of water
  • 3 long green bean, soak in the ice water before serving as a side dish
  • 1 tablespoon of shrimp paste (kapi), for side dish
  • 3 limes, squeeze before eating

Preparation

Step 1. Stir fry sliced duck skin until it takes out its oil, add duck organs, duck meat, MSG and keep stir frying until cooked. Then take out of the fire and let cool down in a large deep plate.

Step 2. Bring another bowl for mixing the fresh duck blood, 1 table spoon of blood per 2 table spoons of water. Repeat until the blood is finished and mix well gradually. Then pour the blood into the plate with the meat that is already prepared and leave for about 10 minutes to get the blood pudding.

Step 3. After that, add the topping with sliced chili, fried shallots, roasted rice powder, lemongrass, green onions, coriander, mint leaves, thai basil and roasted peanut. Ready to serve!

Step 4. Before eating, squeeze lime juice on the blood pudding and eat with crispy long green beans dipped with shrimp paste (kapi) for more flavor. Zap!
