Have you ever been to Taiwan? If so, I imagine that you have already tasted or seen the famous sweet potato candy (YuYuan), a specialty of JiuFen, which was created in Taiwan in 1964. If you have not been to Taiwan yet, this is no It doesn't matter, because with my recipe, you can easily make this moist dessert again in your country.
For the dough, since the amount of water in the potato is not the same every time, do not hesitate to add more water or tapioca flour if necessary. And I assure you that it is normal for the dough to be a little sandy when it is not yet cooked!
You can replace the sweet potato with pumpkin or squash, it won't change the texture, and it will give you another great taste!
Finally, I advise you to consume this dessert with ice cream (personally, I prefer with the milk one), it will surprise your taste buds!

1. Peel the sweet potatoes and taro and keep about 200g of each one.
2. Grate the potatoes and taro and steam them for 20 minutes.
3. After cooking, add about 120g of tapioca powder to each portion of potato. Especially for the taro which is not very sweet, we add 60g of sugar. While mixing, if it's too dry, feel free to add hot water. On the contrary, if it is too sticky, you can add tapioca powder.
4. Now you have the 3 balls of potato and taro dough. Take one and sprinkle some tapioca powder to prevent the dough from sticking to the board. Form a sausage and cut it into small pieces. Sprinkle powder again to prevent them from sticking together. Do the same with the other balls of dough. You can also make any shapes you want.
5. In boiling water, put the potato candies you have made. Stir a little, and when the water boils add a glass of cold water for even cooking. It's ready when the water boils again.
6. Take out and dry, add vergeoise sugar when it is still hot and enjoy! At the table it's Chiou!
